Recipes


We are making some dietary changes around here to battle the bulge. What we are doing is weeding out processed foods, white flour, sugars, and unhealthy oils. That's the short of it.


I will be altering recipes we already eat to comply with our changes. I'll post some of the yummy recipes we try and like. If you have some of your own that you would like to share, feel free to post!

You mean you don't want Missy's Chocolate Swiss Cake rolls thingie she makes?!
I do have one for you that I THINK will be useable for you or easily adaptable, but I'll email it to you.

I am battling the bulge, too. Or, rather, it is battling me. I have done some serious over haul myself.

Does this mean you don't want that black-bean-bulge-building-dip recipe with the cream cheese in it?

Ames, I still want the bean dip recipe. I have options for cream cheese. Can use the fat-free, or 1/3 less fat Neufchaele (sp?)

Hey there Gal! I've got another recipe for you. I'll post this one just in case someone else may want to take a peek at it.

Fruit Salsa with Cinnamon Chips
1 c. finely chopped fresh strawberries
1 medium navel orange, peeled and finely chopped
3 medium kiwifruit, peeled and finely chopped
1 can (8oz.) unsweetened crushed pineapple, drained
1 TBS lemon juice
1-1/2 tsp. ground cinnamon

In a small bowl, combine all the ingredients. Cover and refrigerate until serving with the chips below.

Cinnamon Chips:
10 flour tortillas (8") (could also use whole wheat)
1/4 cup butter, melted
1/3 cup sugar (if you're doing away with refined sugars, use whatever you are sub'g with)
1 tsp. ground cinnamon

Brush the tortillas with butter; cut each into 8 wedges. Combine sugar and cinnamon, sprinkle over tortillas. Place on ungreased baking sheets. Bake at 350 for 5-10 minutes or just until crisp. Serve with fruit salsa.
Yield: 2/12 cups of salsa and 80 chips.

Enjoy! This has become one of Mike's and my favorite dishes. We'll often do this along with a salad for dinner and still have some left over for the next day.

I'm a big moderation girl. Drink mass tons of water- with no ice. It helps a lot. I heard somewhere that if you are trying to lose weight, drink half your body weight in water (ounces, of course). So, if you weigh 180 pounds, drink 90 ounces of water. Hard at first, but then your body learns to love it. If I don't drink enough water, my body starts to feel sick. I also try not to eat after 6:00 PM. Hope that helps. Good luck!
